Easter Fun
Started off our Saturday watching an Easter parade in Ahwatukee, and later an egg hunt at the local park.
Had time for a quick pizza dinner, then colored some eggs.
Cole picked blue.
On Sunday, a nice Easter brunch, after checking out what the Easter Bunny left.
Then headed outside to play with the new toys - where to begin?
Bubbles, always a hit.
And finally, having fun playing 'hide the eggs'. Each time, after Lauren hid the two eggs and Cole would find them (after some help from Lauren), he would hide them in exactly the same spot Lauren had just hidden them (and would get mad if you suggested otherwise).

Test Kitchen
Tested out a vegan cake recipe, in preparation for Cole's upcoming birthday. This chocolate cake recipe was highly rated, and did not disappoint. No eggs, milk, or butter - yet very moist and tasty. The recipe calls for baking in a 9x5 loaf pan, but I made a dozen cupcakes (with a little leftover batter), baking for about 18 min. Lauren helped me make them, and we used our newly purchased batter tube - so easy and mess-free! (Although Lauren informed me that it was a little hard for her to squeeze because she didn't have a lot of muscles in her legs....)
The final product. I added some vegan vanilla frosting (using Earth Balance spread and a little soy milk). While it was good, I prefer a whipped frosting over buttercream. Might try a chocolate frosting next time; or maybe go for a pre-made frosting and just let Cole enjoy his without :)

All Mine
We stopped at Yollipop this weekend for a fro-yo treat. Coincidentally, today's deal at DealChicken happens to be a Yollipop gift card ($40 gift card for only $20) - so we'll be visiting there a few more times in the near future.

Project Garden: Day 8
I see green! Germination for most of the seeds was 7-10 days, and nearly all have sprouted (still waiting on the tomatoes). Lauren was really excited and wanted to touch them all. We added some flowers to our mix today - California poppy and a wildflower mix - after another stop at the dollar store for some planters. We were also on the lookout for a watering can - none at the dollar store, but amazingly we found 2 cute bright colored plastic ones at Tuesday Morning next door. Cole keeps saying 'water plants! water plants!'

Lauren: 'Do you want to see my yoga pose?'
Me: 'Sure. Wow; very nice. Where did you learn that?'
Lauren: 'From the back of the Kashi box.'
Hmm, I'd already thrown out the cereal box, so I had to google it - turns out Mrs. Sting recently partnered with Gaiam and Kashi, and the 2nd phase of the partnership included some poses from her fitness series on the back panel of GOLEAN cereals. Very observant I must say...
